Step into the festive spirit at Northcote Cookery School for our Gingerbread House Masterclass with the talented Debby Donnelly-Addison! Held just before Christmas, this course is the perfect way to celebrate the season while learning how to create your gingerbread showpiece.

Under Debby’s expert guidance, you’ll master key skills like preparing gingerbread dough, piping intricate decorations, and building your house with precision. You’ll also create royal icing transfers for delicate railings and add a touch of shimmer with edible rice paper.

It’s a fun, hands-on experience that combines festive creativity with practical techniques. You’ll leave with a stunning gingerbread house and a set of new decorating skills to enjoy for many Christmases to come!

Schedule for the day:

• Breakfast on arrival
• Spend the morning making the dough, cut-outs, and windows, baking your gingerbread house and trimming
• Lunch in the restaurant
• Spend the afternoon making Royal icing, constructing and decorating

*Please be aware that all attendees are responsible for getting their gingerbread house home safely. Northcote/The Boho Baker cannot be held accountable for any breakages outside the scheduled course hours. Your house will have ample setting time before the end of the day, but we also recommend the following measures before heading home:

1. Your gingerbread house should be kept on a completely flat surface, such as in a car boot. It often helps to place something soft, like a jacket or blanket, around the box to prevent it from sliding around.
2. If your house must go on a seat or someone’s lap, you will need a folded-up jacket (or similar) to fill the tilted side and keep your house on an even surface.
3. If you place your house in the footwell, do not switch on the heaters.
4. If you are not sure what is best, ask Deb to help you.
5. You will need to be able to carry a box weighing 3kg with both arms, without leaning it into you. If you have any issues with this, please ask for assistance carrying it to your car.
6. Drive carefully, avoiding hard braking, sharp corners, or driving over bumps or potholes at speed.
