Curried Lamb & Rosemary Bites

INGREDIENTS

For the Lamb Bites:

200g diced lamb shoulder
2 tbsp rapeseed oil
1 tsp cumin seeds
½ tsp coriander seeds
1 tsp coriander powder
½ tsp cumin powder
½ tsp black salt
salt and pepper
1 tsp red chilli flakes
2 tbsp ginger garlic paste
2 rosemary sprigs, chopped finely
½ tsp citric acid
½ tsp turmeric powder
½ lemon juice and zest
2 tbsp greek yoghurt

For the raita:
300g greek yoghurt
Chaat masala to taste
Lime juice and zest

METHOD

For the Lamb Bites:

  1. Place the oil into a bowl and add all the ingredients. Mix well into a paste.
  2. Add the lamb to the paste and coat well.
  3. Allow to sit for 30 minutes to 12 hours to marinate, then place onto a skewer.
  4. Place the lamb directly onto the BBQ, turning once until lamb is cooked or place in a hot oven for 10/15mins.
  5. Keep warm until ready to serve.
  6. Serve with raita.
